The middle of winter I won’t be back in this kitchen until January 21st now I usually cook for about 25 girls but right now some of them have already finished their classes and headed home for the holiday I only got about 12 I’m doing so I’m doing a small batch of
Chili and we’re going completely homemade and the first thing we’re going to do is just go ahead and get this meat all browned off I got about 2 and 1/2 lbs here once I get it browned off I’m going to drain the fat then we’re going to start seasoning I got some chili
Powder of course cuz we’re making chili right next I got some cumin I’m just eyeballing all of these I got some Chipotle chili powder too cuz that’s going to bring a little bit of heat then we’re going to go with some garlic powder nice little bit also some onion
Powder these are the basics when it comes to seasoning guys also got some black pepper we’re going to add in a couple little Hefty pinches of salt you got to have that salt don’t forget that part so we’re going to just stir this around mix
It up a little bit then guys once that’s all mixed it’s going to start just getting really really aromatic right now I can smell all those flavors coming together now I’m going to go ahead and add in my tomatoes I got some crushed tomatoes big can and I’m going to add a
Can of water also then I got my kidney beans at this point we’re going to give this a nice stir make sure everything is mixed well and Incorporated you can also taste it at this point and see if you need to add anything else now would be
The perfect time so once I get this to come to a little simmer that’s when I’m going to go ahead and add in my last ingredient that’s some fresh cilantro I like to do it when it’s simmering because then it just instantly blooms that cilantro and the flavors burst out into my
Dish now this chili is just going to simmer for about 30 minutes it’s going to thicken up it’s going to reduce down it’s just going to come together beautifully so let that go and after about a half hour guys get some hot dogs I’m throwing mine down on the griddle
You can boil yours throw them on the barbecue put them in a fry pan however you like I put a few little scores on mine throw them on the griddle we’re going to get them nice and crispy I like those little crispy edges so I move them around sure and
